Spelt Cooking Tips

When cooking with spelt, there are just a few specific guidlines to follow. Most bread, muffin and cake recipes can be adapted to include this healthy option. This grain is rich in nutrients and protein making it a good choice for the whole family. Making even a few simple and nutritious changes to your diet will pay off big time in your health.

Don't worry if your recipes don't turn out perfect the first time. Just have fun experimenting and pretty soon you'll be making delicious and nutritious food. Here are a few valuable spelt cooking tips to help you.

Spelt berries

This whole grain (also called berries), can be used in place of rice or potatoes for any meal.

To prepare:

Wash grain thoroughly 3 times to remove any excess dirt or debri.

Soak in water overnight.

Drain and rinse again.

Put in pot and add 3 parts liquid to 1 part grain.

Bring to a boil, then turn heat to low and simmer for about an hour, stirring occasionally.

You can add butter, salt and pepper for a savory meal, or eat for breakfast as you would oatmeal, topped with cinnamon, brown sugar, raisens and nuts.

Spelt in baking

You can replace your traditional flour with the flour of this grain in just about any recipe. However, there are just a few things you need to know. This flour requires a little less moisture when used in baking. Use about 3/4 the amount of liquid you would normally use, or you can add more flour (1/4c per cup extra). Also, the gluten in this grain is more fragile than traditional flours, therefore the mixing time should be shortened, about 3 1/2 to 4 minutes tops.

Bread Delicious bread recipe

This easy and delicious recipe can be thrown together using a Bosch mixer. It makes 5-6 loaves.

2 quarts warm water

2 tbsp. yeast

2 tbsp. dough enhancer (found at specialty or health food stores)

3/4 c. sugar

1/2 oil (extra virgin coconut or olive oil is best)

4 eggs

2 tbsp. salt

Approx. 15 c. whole spelt flour

Heat oven to 350 degrees. Let yeast disolve in warm water. Add the rest of the ingredients except for the salt and flour. Mix about 30 sec. Then add salt and flour, (adding salt too soon will kill some of your yeast). Mix 3 1/2 min. Let rise for 1 hour. Punch down and divide into 5-6 bread pans. Let rise for 30 min. Bake for 45 min.
